Cakes & Cake Decorations Class
This is a beginner’s and intermediate detailed semi hands on class on cakes and cake decorations. I would be covering over 6 different types of cakes, a variety of cupcakes and Swiss rolls. This class includes my most popular 6 minutes chocolate microwave cake and cupcakes. I will also be sharing over 30 types of decorations that are very easy and practical to make but all look very professional and stunning.
I’m so proud to say that I have shared my cooking secrets with thousand of students and many have gone on to start their own bakeries and many are amazing home bakers too .
All the cakes and cupcakes I will be teaching are egg less. We will do a good variety. Every cake n cupcake will be frosted and decorated using chocolate garnishes, sugar decorations, piping ideas with cream, truffle and ganache etc. Everything taught will be easy to do but all the cakes will look as they have been done by an experienced baker.
Timing: This is a 3 days class. 10.00 am to 5.00pm.
Prerequisite: Just a passion to learn. Preferred age is 14 plus.
Things to Carry: None.

Egg-less Chocolate Sponge
This is a simple chocolate egg-less sponge. It can be eaten just on its own or with some Ice cream or with your cup of afternoon tea.
It is also the base sponge of any cake you want to make like a Black Forest cake, a mousse cake, chocolate truffle cake etc etc.
Egg-less Vanilla Sponge
This cake can be eaten on its own as a tea time cake. We can also use this as a base cake to make any flavour of our choice like a fruit cake etc.
Egg-less Mousse Cake
This is my take on a mousse cake, filled with a yummy chocolate mousse and frosted with the same and decorated beautifully with roses piped with a 1M nozzle.
Egg-less Pineapple Upside Down Cake
This is a delicious cake made specially for people who don’t like chocolate.
This cake will be baked with melted sugar and pineapples spread on the base of the cake and then topped with a vanilla cake batter and baked. So when we invert it, it will be ready to eat with the decorations already done. This is served with vanilla ice cream or floppy whipped cream.
Egg-less Marble Cake
As the name suggests this cake has a marble design which is made by mixing a chocolate cake batter and vanilla cake batter lightly together to form a marble pattern. This is a tea time cake and usually just drizzled with a glacé icing.
Blueberry & Strawberry filled Egg-less Vanilla Muffins.
These are vanilla muffins filled with strawberry and blueberry fruit fillings, you may also use any other filling of Your choice like boiled Apple, chopped Banana, Jam, Nutella, chocolate truffle or you can also just add some chocolate chips in the entire batter and make chocolate chip muffins. The muffins will be decorated with glacé icing.
Eggless Red Velvet Cupcakes with Cream Cheese Frosting
The red velvet cake batter is a little different to other batters to make the muffins very moist and soft. The frosting and decoration on top will be an authentic cheese cream frosting. With the same batter you can also make a red velvet cake.
A Swiss roll cake is a sheet cake filled with a frosting of you choice and rolled to look like log. It can be made with a Vanilla, Chocolate or even a red velvet cake batter. It will be covered with a chocolate buttercream icing.
Microwave Egg-less Chocolate Cake
This is a delicious chocolate cake magically made in the microwave in 6 minutes.
Sometimes when you need a dessert in a hurry this is the cake you can make with a yummy chocolate truffle sauce and amazing feather decoration techniques.
Microwave Egg-less Pistachio Cake
A vanilla batter with pistachio powder makes a really tasty cake. This is also made in the microwave in 6 minutes. This recipe can also be made in a conventional oven too. This cake will be frosted with whipped cream and crushed praline and finished with cream and piped decorations. It can be also be decorated with frosting of your choice.
Eggless Chequerboard Cake
This cake is made with 3 one pound cake sponges. Each sponge will be piped alternatively with a vanilla and chocolate cake batter. Once baked and cooled they will be stacked one on top of each other and frosted with chocolate ganache. We will finish this off with a beautiful chocolate collar. And piped teardrops on top of the cake. When you cut this cake you will see a beautiful cheque’s design on each slice.
Eggless Banana Walnut Bundt Cake
This is made in a special bundt cake tin but yes you can make it in any tin of your choice. This cake will have bananas and walnuts plus a lot of chocolate chips in the batter. It can be a nice tea cake as usually there is not much decoration on top.
All the cakes will be eggless and all will be beautifully decorated in different ways using a variety of beautiful chocolate garnishes , sugar decorations , edible glitter and ready made sprinkles.
