This week I’m going to share my favorite Italian recipes with you. Hope you love and enjoy making them.Well we have to start with Pizza don’t we.

Ingredients for the base:

½kg flour
3 tspns of fresh yeast (Health Food Centre)
1 tspn of salt
½ tspn sugar (if u forget it’s no big deal)
1-2 tbspn Olive oil opt

Method:
------------
In a pan warm the flour for a few minutes. Use a big roomy bowl and add the yeast to the flour and blend it in very, very nicely with your finger tips. It will take a good 5-8 minutes but please do it well, it’s really very important. Now add all the other ingredients except for the oil and add enough water to make soft dough. A little softer than our chapatti dough. Knead for at least 10 minutes until you have nice smooth soft and unsticky dough (if there is such a word). At this stage you can add the oil and knead until it is incorporated well into the dough. Place in the centre of the bowl and cover with a clean, thick kitchen towel. Keep this in a warm place basically somewhere, where there is no draught. You will be pleased to see that within 1 hr your dough will have doubled in the winter it will take longer. Please never place the dough in a warm oven. If you wish and you have the time you may punch the dough down knead it well again and leave it to double again. Now take the dough and divide into about 6 equal parts (depending on thickness and size) Heat the oven about 180 degrees. Grease 2 pizza trays you may use steel plates too. Dust lightly with some makai ka atta (maize flour). Roll out the dough using plenty of flour. Place on pizza tray, prick with a fork all over and, bake blind till half done. Remove from tray. Prepare all the pizzas in the same way. Cool and place in a container.

For the Pizza Sauce

There so many variations, please add whatever yr family and friends like, cook according to them always and not just stick to someone’s recipe.

Ingredients:

1 kg of nice firm red tomatoes
A few cloves of garlic opt
1 medium onion opt
1 tspn dry oregano
Olive oil
Salt and pepper to taste
¼ tspn sugar

Method:
------------
Wash tomatoes well and make a + sign with a knife on the bottom part of the tomato and boil them till soft. (U can pressure cook or micro). Skin the tomatoes the best you can and just chop roughly. In a pan add oil and chopped garlic and onions sauté on a gentle flame till you get a wonderful aroma. (In Italy, some people, at this stage remove the onions and garlic from the oil and add the tomatoes try it once if you like.) Now add tomatoes and cook till it is nice and thick. Add all the other ingredients. Drizzle some oil on top and remove from flame...

Assemble the Pizza:

Yes, mozzarella cheese is a must but please if someone does not like it don’t force it down their throats. I think it is so important to respect everyone’s likes and dislikes. If they prefer Amul please it’s perfectly fine. Imagine we are having Italian friends over for dinner we will obviously go slow on the chili powder won’t we and we will make sure everything would be according to their taste so why don’t we treat our family and others the same way ok ok enough of my lectures. I hope I have not offended anyone. Ok so grate the mozzarella I like Amul mozzarella. Spread a nice layer of the tomato sauce on the half cooked pizza and sprinkle a generous amount of cheese on top. This Pizza is known as a margarita. Then you can put whatever toppings you enjoy. Place in a hot oven with grills on, top and bottom and bake till crisp from under and the cheese has melted on top. Never over bake the mozzarella otherwise it will taste like leather. Sprinkle some oregano on top and serve immediately.
