Here's how to:

Special Sauce

Ingredients

¼ cup sugar & ½ cup water mixed well.
2 tbspns light soya sauce
2 tbspns rice vinegar/white wine vinegar
2 tbspns ketchup
1 tbspn lemon juice
1/8 tspn sesame oil / or any cooking oil

Mustard Sauce
1 tbspn mustard sauce
2 tspns water

Chilli garlic Sauce
1–3 tspns garlic and red chilli paste

Method

Add all other ingredients. Mix well and refrigerate.
Add 2 tspns of water to the mustard sauce and set this aside as well. Add your desired measurement of mustard and garlic chili sauce to the special sauce mixture to pour over your lettuce wraps.

Stir Fry sauce


Ingredients

2 tbspns light soya sauce
2 tbspn brown sugar / white sugar
½ teaspoon rice vinegar / white wine vinegar
1 cup rice noodles (fried)
3 tbspns oil
1 cup finely chopped water chestnuts (pani phel
2/3 cup finely chopped mushrooms (opt)
3 tbspns chopped spring onions
1 tspn finely chopped garlic (opt)
4–5 sliced iceberg lettuce, cups

To prepare the filling for your lettuce wraps.
Heat the oil in a large frying pan and on a high heat, stir fry garlic, water chestnuts and mushrooms and spring onions.

Prepare the stir fry sauce by mixing soya sauce, brown sugar, and rice vinegar together in a small bowl, add 1 tbspn of oil. Add the stir fry sauce to the pan and sauté the mixture for a couple minutes then add fried rice noodles. Mix well

Make the lettuce cups by slicing the top off of a head of iceberg lettuce right through the middle of the head. Pull your lettuce cups off of the outside of this slice.

Make the special sauce at the table by adding your desired number of mustard and chili sauce to the special sauce blend:
1 tspn mustard and chili sauce for mild.
2 teaspoons each for medium.
3 teaspoons of each for hot.

Assemble lettuce wraps by spooning slightly cooled filling into each lettuce cup, adding special sauce over the top, folding it up like a taco. Serve at once.

Options
I know many of you dislike mushrooms , but you may replace mushrooms with any vegetable that goes with Chinese Cuisine, like baby corn, broccoli etc.
