Ingredients :
2 cups besan (chick pea flour)
1 heaped tspn chilli and ginger paste
½ - 1 tspn red chilli powder
½ tspn garam masala
1 tspn crushed coriander seeds
¼ tspn crushed ajwain (carom) seeds
1 tspn crushed saunf (fennel) seeds
As much as you like, finely chopped coriander leaves
2-3 pinches of soda bi-carb with a few drops of lemon juice
Salt to taste
Water.

Method :
Put all the ingredients in a bowl add enough water to make a not too thin and not too thick paste.

Which veggies to use?
We normally use potatoes, onions etc. But to make this special try using exotic veggies like whole baby corn, mushrooms cut in half, courgettes (zucchini) in round slices, asparagus cut in half etc.

Heat the oil in a kadai (wok). Dip a few pieces of each veggie in the batter. Now working quickly shake the excess batter and immerse each batter coated veggie in the oil. Fry till golden and serve immediately with green chutney or the good old tomato ketchup.
